Coconut sugar is a natural, unprocessed sweetener derived from the flowers of coconut trees. It is one of the most productive and widespread plants in the world, Cocos nucifera and grows on islands and coastal areas in most tropical climates. Coconut sugar is mainly composed of sucrose, just like white sugar. But it also contains inulin, a probiotic fiber that prevents the absorption of carbohydrates, greatly reducing the glycemic index. More specifically, the value of the glycemic index is only 35, exactly half that of regular sugar (70). All products with these characteristics protect our body long-term from Type B diabetes.
